Client : Frédéric Scailteur is a Maître chocolatier/patissier in Tokyo. He opened in 2006 his first chocolate shop in Tokyo. The essence of gourmet can typically be embodied by dark colors in their environment. The patisserie of Belgian Frederic Scailteur however, uses light pastels. “I didn’t want my environment to look like all the others,” Scailteur says. “I wanted to use the colors of nature to represent the fact that I use 100-percent natural products.” The result is a mix of chocolate mousse and caramel crème brulée, with a sesame-almond nougat base, garnished with edible gold leaf.

Work : Natural, smooth and peaceful were the keywords from the brief. Communication is the most important, portrayed by : brown wall seats, green bands on the wall, warm ground for translating a homely feeling.
